Denny Imbroisi.
Denny Imbroisi was born in 1987 in Mantua, Calabria.
At the age of 14, he discovered traditional recipes while helping his father in the kitchen.
After attending hotel school, he trained in the techniques of Italian haute cuisine.
He moved to France in 2006, where he worked for Giancarlo Perbellini, Quique Dacosta and William Ledeuil.
Alain Ducasse discovered this young Italian culinary prodigy and took him on as sous-chef, entrusting him with the kitchens of his restaurant, the “Jules Verne”, allowing him to learn the secrets of French tradition.
In 2015, Denny opened his own restaurant, “IDA”, in Paris,
The following year, Le Figaro and the Guide Pudlowski hailed his work, awarding him the titles of best Italian restaurant and best carbonara in France.
In 2016, his experiences on the other side of the Alps are recounted in a book: “L’Italia di Denny Imbroisi, 45 ricette di un italiano a Parigi” (Denny Imbroisi’s Italy, 45 recipes from an Italian in Paris).
In it, the chef teaches how to blend the two European cultures to bring out the best in each.
The same year, he was named Lavazza Brand Ambassador and took part in Identità Golose, where he presented his tagliolini pasta based on the Kafa coffee variety.
He opened the “Epoca” restaurant in 2017, which was described by L’Express as “the best Italian restaurant in France”.
